Ingredients: 1 lb. ground beef 1 onion, chopped 3 carrots, peeled and chopped 3 stalks celery, chopped 1 (14.5 oz) can diced tomatoes, undrained 1 (6 oz) can tomato paste 2 cups beef broth 1 bay leaf 1 tsp. dried thyme leaves 1/2 tsp. black pepper 8 oz. wide egg noodles, cooked and drained Optional toppings: Shredded Parmesan cheese, croutons Instructions:1. In a large saucepan over medium-high heat, cook the beef and onion until the meat is no longer pink; drain off any excess fat. Add the carrots, celery, tomatoes with juice, tomato paste, beef broth, bay leaf, thyme, and pepper. Bring to a boil; reduce heat and simmer for 30 minutes.2. Discard the bay leaf. Remove 1 cup of the soup mixture and set aside; stir the noodles into the remaining soup mixture. Serve with the reserved soup mixture and optional toppings if desired.Yield: 6 servings

Ingredients:

1 pound ground beef

1 onion, chopped

3 cloves garlic, minced

2 carrots, peeled and sliced

2 stalks celery, diced

1 teaspoon dried basil leaves

1/2 teaspoon salt

1/4 teaspoon black pepper

6 cups beef broth or water*

 *If using water, add 2 cubes beef bouillon dissolved in 6 cups hot water.        To Make:    In a large soup pot over medium heat, cook the ground beef, onion, garlic, carrots, celery, basil, salt and black pepper until the meat is browned and the vegetables are soft. Add the broth or water and simmer for 30 minutes. Serve hot with some nice bread on the side to soak up all that delicious soup!

  3. Add the beef broth, tomatoes with their juice, oregano, bay leaf, and pasta shells. Season with salt and pepper, to taste. Bring to a boil and cook until the pasta is al dente, about 10 minutes. 4. Remove the bay leaf before serving. Serve with grated Parmesan cheese, if desired. Enjoy!

To make the soup: In a large saucepan over medium heat, cook the ground turkey, onion and garlic until the turkey is no longer pink and the onion is softened. Stir in the chicken stock, tomatoes with juice, noodles, tomato paste, basil leaves, oregano leaves, salt and pepper. Bring to a simmer and cook for 10 minutes or until the noodles are cooked al dente.
